  3. Add Onions & Seasoning: Stir in the diced onions, salt, pepper, and paprika (if using). Cook for another 2–3 minutes until the onions soften.
Cook the Eggs:
  1. Whisk the Eggs: In a bowl, whisk the eggs with milk until fully combined.
  2. Push Potatoes to One Side: Move the potatoes to one side of the skillet. Pour the eggs into the empty space.
  3. Scramble the Eggs: Cook the eggs, stirring gently until they are just set.
Combine & Serve:
  1. Mix Everything Together: Stir the scrambled eggs and potatoes together in the skillet.
  2. Add Cheese: Sprinkle shredded cheese on top and let it melt for about 1 minute.
  3. Garnish & Serve: Top with chopped green onions or parsley and enjoy hot.
