Cook the Potatoes:
- Heat the Oil: Warm olive oil or butter in a large skillet over medium heat.
- Sauté the Potatoes: Add the diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden brown and crispy.
- Add Onions & Seasoning: Stir in the diced onions, salt, pepper, and paprika (if using). Cook for another 2–3 minutes until the onions soften.
Cook the Eggs:
- Whisk the Eggs: In a bowl, whisk the eggs with milk until fully combined.
- Push Potatoes to One Side: Move the potatoes to one side of the skillet. Pour the eggs into the empty space.
- Scramble the Eggs: Cook the eggs, stirring gently until they are just set.
Combine & Serve:
- Mix Everything Together: Stir the scrambled eggs and potatoes together in the skillet.
- Add Cheese: Sprinkle shredded cheese on top and let it melt for about 1 minute.
- Garnish & Serve: Top with chopped green onions or parsley and enjoy hot.
