Ingredients
  

  • 1 pound fresh green beans trimmed
  • 1 pound baby potatoes halved
  • 6 slices bacon chopped
  • 1 tablespoon ranch seasoning mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (optional)

Instructions
 

  • Prep the Ingredients Preheat your oven to 400°F (200°C). Wash and trim the green beans and halve the baby potatoes.
  • Cook the Bacon In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the bacon grease in the pan.
  • Sauté the Potatoes Add olive oil to the skillet, then toss in the baby potatoes. Cook for 5-7 minutes, stirring occasionally, until golden brown.
  • Add Green Beans & Seasoning Stir in the green beans and sprinkle with ranch seasoning. Toss to evenly coat.
  • Bake to Perfection Transfer everything to a baking dish, top with crispy bacon, and season with salt and pepper. Roast in the oven for 20-25 minutes, or until the potatoes are fork-tender and the green beans are perfectly roasted.
  • Garnish & Serve Remove from the oven, sprinkle with fresh parsley if desired, and serve hot. Enjoy!
