Prep the Ingredients Preheat your oven to 400°F (200°C). Wash and trim the green beans and halve the baby potatoes.
Cook the Bacon In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the bacon grease in the pan.
Sauté the Potatoes Add olive oil to the skillet, then toss in the baby potatoes. Cook for 5-7 minutes, stirring occasionally, until golden brown.
Add Green Beans & Seasoning Stir in the green beans and sprinkle with ranch seasoning. Toss to evenly coat.
Bake to Perfection Transfer everything to a baking dish, top with crispy bacon, and season with salt and pepper. Roast in the oven for 20-25 minutes, or until the potatoes are fork-tender and the green beans are perfectly roasted.
Garnish & Serve Remove from the oven, sprinkle with fresh parsley if desired, and serve hot. Enjoy!
