For the Dipping Sauce:

  • ¼ cup mayonnaise
  • 2 tablespoons Thai sweet chili sauce
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon honey for added sweetness
  • 1 teaspoon fresh lime juice

Instructions
 

Prepare the Salmon

  • Pat the salmon fillets dry using paper towels to remove excess moisture—this step is crucial for achieving a crispy texture.
  • Cut the salmon into uniform 1-inch cubes for even cooking.

Season the Salmon

  • In a large bowl, toss the salmon cubes with olive oil.
  • Combine garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Sprinkle the spice mixture over the salmon and toss gently to coat.
  • For an extra crispy finish, lightly dust the salmon bites with cornstarch and coat with panko breadcrumbs.

Choose Your Cooking Method

  • Pan-Searing Method: Heat 2 tablespoons of oil in a non-stick skillet over medium-high heat. Add salmon bites in a single layer, ensuring they do not touch. Sear for 2-3 minutes on each side until golden brown and crispy.
  • Air-Frying Method: Preheat your air fryer to 375°F (190°C). Arrange the salmon bites in a single layer and air-fry for 8-10 minutes, flipping halfway through for even cooking.
  • Baking Method: Preheat your oven to 400°F (200°C). Place the salmon bites on a parchment-lined baking sheet and bake for 10-12 minutes. For extra crispiness, broil for the last 1-2 minutes.

  • In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth.
