Ingredients

  • 2 cups finely chopped pecans
  • 1 cup graham cracker crumbs
  • 1/2 cup brown sugar light or dark
  • 1/4 cup maple syrup or corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup powdered sugar for rolling

Method

  1. Prepare the Base: In a large mixing bowl, combine crushed graham crackers, chopped pecans, brown sugar, and a pinch of salt.
  2. Add Wet Ingredients: Stir in the corn syrup (or maple syrup), vanilla extract, and melted butter. Mix until you have a sticky dough.
  3. Form the Balls: Using a small cookie scoop or your hands, roll the mixture into 1-inch balls. Place the balls on a parchment-lined baking sheet.
  4. Chill the Balls: Refrigerate the pecan pie balls for at least 30 minutes to firm up.
  5. Optional Chocolate Coating: If desired, melt your favorite chocolate and dip each ball for a decadent finish. Place the dipped balls back on the parchment paper and chill until the chocolate sets.

Notes

  • For extra flavor, toast the pecans lightly in a skillet before chopping.
  • Add a splash of bourbon for a boozy twist!
  • Substitute maple syrup with honey if you prefer a different sweetness profile.
