- 1/4 cup ghee or butter divided
- 1 tablespoon olive oil
- 1 lb Yukon Gold potatoes cut into 1/2-inch cubes
- 3 garlic cloves minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sea salt plus more to taste
- 1/4 teaspoon ground black pepper plus more to taste
- 1 1/4 lb sirloin steak cut into 1/2-inch cubes
- Freshly chopped parsley for garnish
Cook the Potatoes
Once the ghee is melted, add the potatoes.
Sprinkle the garlic, thyme, oregano, salt, and pepper over the potatoes.
Cook for 2-3 minutes before stirring.
Stir the potatoes and continue to cook until they are golden brown and fork-tender (about 8-10 minutes), stirring frequently to prevent sticking.
Remove the potatoes from the pan, along with the browned bits, and set them aside.
Sear the Steak
Increase the heat to medium-high and add the remaining two tablespoons of ghee to the pan.
Once melted, add the steak pieces and season with a dash of salt and pepper.
Cook the steak pieces for at least 2 minutes before stirring.
Stir and cook until the steak is golden brown, about 1-2 minutes.
Combine and Finish
Add the cooked potatoes back into the pan with the steak.
Stir to combine and cook for an additional 1-2 minutes.
Add more salt and pepper to taste.
Top with freshly chopped parsley.
- You can use other small potato varieties such as yellow, red, or fingerling potatoes.
- Make sure to cut the potatoes small and evenly to ensure they cook quickly and evenly.
- Resist the urge to stir the steak too early to allow it to sear properly before stirring.
